It was quite a buzz at Mosaic restaurant even before the buffet opened. It was not even 12 noon, diners from around Phuket with reservations were already anticipating to flock in. The kitchen team and the service staff were giving the final touch of the table setting as well as filling up the enormous island buffet with salivating dishes. Despite the clock was ticking fast, the team were still in high spirit and determined to put on the “best show” for their diners that were waiting patiently at the door.

We were seated fast according to our reservation made. Processo or French champagne to follow according to your preference and why not., as it makes the perfect company for the appetizing Thai salad such as Som Tam Moo Yang - the classic green papaya salad with lime fresh, chili smoked shrimps, peanut and grilled pork.

Various kind of flat and thin rice and egg noodles are offered with their very own recipe of chicken/pork clear broth, accompanied by a good selection of condiments and “toppings” from fresh spring onion, aromatic deep fried garlic and Thai chili flakes to different kind of meat balls to suit your taste and to satisfy your choice. Our wait staff Ms. Pla was there (if you have read our review on Patio ALFRESCO) and once again she looked after our table well, continuously bringing some small local delicacies to our table and indulging us in no time.Thai cuisine, in its essence, is an artistic expression of a flavour balance.
