As far as we know, Slovenian wines is still a stranger to many wine aficionados as beers and other liqueurs or dessert wines dominates the market instead and there is an opportunity arise now for you to explore the unknown region, thanks to the Michelin-Star restaurant T'ang Court at The Langham, Hong Kong who brought in this unique and most-loved Slovenian Biodynamic wine or we rather called it "beyond organic" to the local dining scene especially to pair it with our all time favorite Classic Cantonese cuisine. What's the verdict......? They absolutely complements each other. A dining experience with Chinese cuisine and spiritual new world wines attuned with the stars reflecting the culinary essence of the Tang Dynasty and known for its classic yet timeless Cantonese dishes. The new age astronomical dining with its exclusive biodynamic wine and dine menu showcasing a synergy six-course journey cohesively blend with biodynamic wines from Slovenia's Movia Winery that have been harvested according to the position of the planets.
Slovenian wines have been influenced from Slavic traditions, along with its Austrian and Italian neighbours, and deemed to be the oldest vines in the world as a whole. Veered as the national wine of Slovenia, Movia Winery has taken a step forward to refine their grapes viticulture approach through biodynamic farming. It is an idea that sees the vineyard as an ecosystem and emphasises the holistic development and the interrelationships of soil, plants, animals and farmers as a whole. Believing that crops would be of better quality if they are attuned to external energies as well, farmers grow and harvest their grapes according to the natural alternation of astrological influences and lunar cycles. This elevation from traditional organic farming is believed to have improved both the taste and nutrition value of the wine produced. The exclusive Biodynamic Wine and Dine Menu require a minimum number of 10 people and priced at HK$1,988 + 10% per person.

Pair with 2006 Slovenia Movia, Puro Rose with a beautiful and delicate nose of strawberries, withered flowers and mineral notes and refreshing in the mouth. It opens slowly and releases a string of herbs, sage, mint leaves, thyme and rosemary. It is refreshing in the mouth
<Stir-Fried Sliced Lobster with Spring Onions, Red Onions and Shallots>
Pair with 2012 Movia, Sauvignon with lilacs, mint, basil and orange flower hit the nose. It is dense and silky and the palate is pleasured with grapefruit, pineapple and a touch of toffee.

Paired with 2009 Movia, Modri Pinot Nero with hints of menthol adding complexity to the crisp red fruit flavours. Ripe palette with red cherry, earth, good minerality, relatively big mouthfeel, chewy tannins, silken and elegantly structured.

Paired with 2011 Sivi Pinot Ambra. A late harvest aged in French oak barrels with fruity rendition. Balanced acid and aroma, thick and rich with loads of peach, honey and melon aromas and flavours.

Paired with 2007 Movia Merlot with great nose of leather, oak and dark fruits. The deep garnet colour wine with great structure, smooth tannins and a long finish.
