Liber Pater AOC Graves 2007 was a difficult vintage for Bordeaux reds, however, this wine does not have the vegetal notes that the majority of 2007 Bordeaux reds possess. The wine is a clear, with deep intensity. Its colour is a flawless purple, reflecting its youth. The nose unveils a pleasant oak aroma with caramel notes. It is a very expressive with fruity notes suggesting black currants and other spices. With aeration, the wine reveals hints of roast with a good density and a well-integrated rich aroma.
The attack is frank with great finesse. It hints of fresh fruit, strawberries, currant and toffee. The wine is structured with the power of substantial, yet soft tannins. The finish is lengthy. A lot of spices is also present, with the characteristics of Szechuan red pepper. Contrary to expectations, the wine shows no vegetal notes, with great harmony between fruit, acidity and alcohol. After an hour of aeration, the aroma develops into notes of cocoa and coffee.This wine will accompany Tournedos Rossini, duck confit, foie gras, and a few slices of truffle of Alba. It will also go well with venison with morels.
